1) The Classic Egg + Cheese /// We kept this vegetarian by subbing in plant-based sausage, a JUST Folded egg, vegan smoked gouda, and a special strawberry sauce. (recipe below)
2) Mexican Potato + Black Bean /// Rather than using chopped potato wedges, I used a full hash brown in the pocket. It gives an amazing crunch and depth of flavor! Also added: refried black beans, purple cabbage, fresh mango, fire roasted corn, and salsa.
3) PB + Banana /// This is the perfect sweet + salty combination: peanut butter, banana slices, banana walnuts, and a drizzle o' honey.

Strawberry Sauce for Breakfast Pockets
Mix ingredients together in a small bowl. Serve with the classic egg + cheese breakfast pocket.
